Chefs Wendy Hileman, CEO, and Greg
Mantuano, CFO, for the Healthy Adventures Foundation will teach
us about healthy cuisine that tastes
great and is nutritional. Wendy, a
Ph.D. Candidate, is an avid urban farmer with a home garden, chickens and a
tilapia pond. Greg is the Executive Chef
with over 20 years experience in the restaurant industry. They both are interested in connecting people
with seasonal fruits and vegetables and using foods as a complementary tool
toward good health by eating to live instead of living to
eat! We will be eating and enjoying the
salads they prepare for us.
October 7 Field Trip 1:00
p.m.
Tour of Peder and Julie Norby’s Carlsbad estate adjacent to the Agua
Hedionda Lagoon. The Heron’s
award-winning house is almost entirely powered by the sun. This prairie-style home is fronted by rows of
cabernet grapes and bejeweled by copper sculpture and mosaic tile art. We will have the opportunity to taste and
enjoy his prized wine. The Norby’s
backyard is planted with drought-resistant sycamore, deer grass, coyote bush,
ceanothus, white sage, Sangiovese grapes and a gently rolling brook. The irrigation system uses rainwater that
flows from the roof. Their remodeled
home was named “Heron’s House” for the winged visitors that frequently drop in
from the Lagoon.

Our member, Jay
Klopfenstein, will show us the many uses of the Earth Box Garden Kits provided
by the Carlsbad Community Garden Collaborative of which he is
President. Jay and his students have
developed a Green Audit Program to help local businesses and homeowners save on
energy, water and natural resources.
Through their Garden Collaborative grant, this newly-formed non-profit
makes possible placement of Earth Boxes in our community and schools. The Earth Boxes are great for placement in
patio areas next to the kitchen or easily placed in one’s own backyard. Jay will provide a slide show and video clips
of how these portable demonstration gardens grow healthy herbs and
vegetables. They use half the amount of
water and generate twice the produce.
